These spotted sea snails are a prized shellfish delicacy. Each shell carries warm brown spots over a creamy white ground, with the natural pattern varying from one snail to the next. Inside, the meat is firm yet tender with a clean, sweet shellfish flavour.
Excellent for sushi, sashimi or served simply as a standalone delicacy, and equally good boiled, stir-fried or dressed in a light sauce. Great for home gourmet dining, fine-dining restaurants and special-occasion platters. Keep chilled at 0-4°C or frozen at -18°C, and avoid repeated thawing to protect the texture.
Bought at the quay and chilled immediately. Prepared without additives, weighed after draining, and packed in paper with a cooling pack for the journey.
Chilled items should go into the coldest part of the refrigerator and be eaten within two days. If you are keeping them longer, wrap them well and freeze them; three months is a reasonable limit.
